First, start with a traditional Mexican appetizer – Citrus Ceviche. If you’re looking for healthy food alternatives, this could be the dish for you. It starts with fresh shrimp and mahi mahi, a blend of triple citrus fruit juice, tomatillo, mango, and crisp radish for a crunch. This isn’t your typical Mexican fare, but if you’ve been to a resort in Mexico, you will know what we’re talking about. Fresh, healthy, delicious, but not what you find at your typical Mexican restaurants in Dallas.

Next, you might choose from a seafood entrée or a classic Mexican food dish, again with a twist.

Paella is the national dish of Spain, so of course, Iron Cactus made it Mexican by adding additional flavors. Our Southwest Paella combines jumbo shrimp, fresh mussels, and bay scallops for the seafood component. Then added roasted poblanos and jalapeno Texas sausage to make it our own, topped with a lobster cream sauce and cilantro-lime rice. Its Spanish, Mexican, and Texan, all in one big pan.

If you love Mexican food, then you know trying the chile relleno is the litmus test for expertise in the kitchen. At Iron Cactus, try the Chile Relleno Rustico – peppers stuffed with chicken, sun-dried cranberries, pepitas, pepper jack cheese and toasted pecans, topped with a verde (green) sauce. We don’t know of any other Mexican restaurants in Dallas that have tried that. Cranberries? Yes, a sweet fruity taste to make these chile rellenos like no other.
